So why Eleanor? I wonder if perhaps because she wasn't much of a fighter - that someone saw it as easy.

...most of our victims so far have been people who wouldn't put up much of a fight. Even Grell was in a state where she was less... aggressive, than she had been before. "Easy targets" seems to be the common factor here.
